Great questions, Rachel. For mindfulness, a daily practice of yoga, mediation, and gratitude helps. And please keep in mind, while it sounds good in print, I don't do a lot, but I try to do it every day.
For distractions, I keep the phone in airplane mode as much as possible, and don't participate in social media except FB minimally. I don't go on YouTube until the evening after work.
As far as writing books, there are so many! What I did when I lived in the States was check out all the library books on writing that looked interesting and dived in. I particularly liked On Writing Well by William Zinsser. He has several. Cheers!
I know exactly what you mean about having first wake moments to practice mindfulness – but only if you wake before the kids! I haven't had a day of waking before the kids for a few weeks, which makes my morning pages full of distraction, and yet, the practice still feels good to achieve before properly starting my day. I must admit, I've been struggling to be mindful in other areas lately as I've got a few projects ongoing, however, I do aim to spend a few moments outside in the sun when I take my dogs outside.
Yes, it's also my constant challenge to try to wake before my kids! :) a nice walk with the dogs sound really good. And it's always a struggle for me to be mindful, it's a journey and process!

I did started a book in writing found in my local library - steering the craft with le guin. I'll check out Zinsser thanks!
